One more quick post today {Onion Gravy}

As the holidays come and go I find myself running to Mema’s collection of recipes for quick treats, sides, and random sauces.  Today I needed a gravy for the turkey and potatoes and this is quite possibly the best gravy I have ever had.  Probably because of the red wine cooked in there!  It was absolutely delicious and received rave reviews at dinner.

Onion Gravy

1/2 c. minced onion

3 T. butter

3 T. flour

1 1/3 c. beef broth

1 T. minced parsley

1/4 c. dry red wine

Saute onion in butter for 3 to 5 minutes.  Stir in flour.  Add remaining ingredients and simmer 3 to 5 minutes, stirring constantly.
