This is one of the side dishes I prepared with Mema’s Pork Chops with Beer recipe. I love squash so this was especially yummy to me!
1/2 purple onion, thinly sliced
1 sweet red pepper, thinly sliced
olive oil to moisten
salt & pepper
1 clove garlic, minced
2 tsp. basil
2 tomatoes, peeled, seeded, & chopped
2 zucchini, sliced
2 yellow squash, sliced
chicken broth (about 1/4 c.)
2 T. cold butter
juice of 1/2 lemon
Cook onion & red pepper with oil, basil, garlic, salt, & pepper over low heat, covered, until onion is wilted. Add chopped tomatoes & cook another moment. Add zucchini & squash and cook until almost tender. Pour in chicken broth (just enough to moisten). Cover and cook 2 to 3 minutes. Remove cover, add butter and lemon juice. Serve immediately.
