Strawberry Cake

Happy Valentine’s Day!  In honor of this day I thought I would make a strawberry cake for Ted and the boys for dessert tonight.  I remember Mema making this cake quite often growing up.  It’s definitely one of my favorites!

Unfortunately, my cake did not turn out as pretty as Mema’s always did.  I tried baking in a bundt pan and I pulled it out a bit too soon.  But it tastes wonderful nonetheless!  And fortunately my boys don’t care what things look like, as long as they taste good!

1 box white cake mix

1 small box strawberry jello

4 eggs

1 c. oil

1/2 c. water

1 small pkg. frozen strawberries (sliced & sweetened) or 1 c. fresh strawberries sweetened – keep the strawberries in the ‘juice’

Mix together cake mix, strawberry jello, eggs, oil, & water with an electric mixer.  Stir in strawberries.  Bake at 350 degrees for 25 minutes.  This can be baked in either a 9×12 pan or a bundt pan (if using a bundt pan add extra time – mine took about 15 extra minutes).

Icing: Mix together powdered sugar with 1 stick soft butter until well blended.  Add 1 small pkg. sliced strawberries slowly.  Alternate powdered sugar and strawberries until you get the right consistency.  Pour over the cake while still hot to glaze.
