Dilled Mushroom Sauce

This is really good served over Broccoli Timboles.  I don’t like mushrooms but I still like the sauce which says a lot!

1 T. butter

3 scallions, sliced

1 clove garlic, minced

4 medium mushrooms, sliced

1 T. oil

1 T. whole wheat flour

1 T. chopped fresh dill or 1 1/2 tsp. dried dill

1 c. milk

Heat butter in saucepan and add scallions & garlic.  Saute’ until wilted.  Add mushrooms and cook over medium heat, stirring frequently, about 1 minute.  Remove mixture from pan and set aside.  Add the oil to the saucepan, heat for a few seconds, then stir in flour & dill.  Cook about 1 minute, stirring frequently, then slowly pour in milk.  Simmer, stirring constantly, until mixture thickens enough to coat the back of a spoon.  Stir in mushroom mixture and serve hot.
