This is a very simple and delicious way to cook potatoes. The only thing I added was pepper.
Mema doesn’t have written down how many potatoes to use. I used about 2 lbs. of petite red potatoes.
1 pkg. dry onion soup mix
2 T. butter
1 tsp. salt
3 c. water
Combine onion soup mix, butter, salt, & water in saucepan and simmer, covered, for 10 minutes. Scrub potatoes; do not peel. Slice 1/8 inch thick and put into greased 9×13 pan. Pour soup over potatoes. Cover lightly with aluminum foil but do not seal. Bake at 350 degrees for 30 minutes. Uncover and bake 20 to 30 minutes longer. Sprinkle with parmesan cheese if desired.
