So my family just does not like seafood. My boys will eat Mrs. Paul’s fish sticks and every so often Ted and I will eat some mild white fish. Even then, we only eat it because we know it’s so good for us. So, since I will probably never make any of Mema’s fish or seafood recipes I’m going to post them here every so often. I’m sure they are wonderful recipes… for anyone who likes fish and seafood!
1 medium onion, chopped
4 scallions, chopped
1 T. butter
1 large (16oz) can pink salmon
1 c. cottage cheese
2 egg yolks
2 c. whole wheat bread crumbs
1 T. minced fresh chives or 1 1/2 tsp. dried chives
1 T. minced fresh dill or 1 1/2 tsp. dried dill
1 T. minced fresh parsley or 1 1/2 tsp. dried parsley
1/4 tsp. paprika
Saute onions & scallions in butter and transfer to large bowl. Add salmon, cottage cheese, eggs, egg yolks, bread crumbs, chives, dill, parsley, & paprika and mix well. Take 1 T. or desired amount of mixture and form into a croquette. Place on a greased cookie sheet and bake at 350 degrees for 20 minutes. Makes about 35 small croquettes.
