Boiled Cookies

boiled cookies (aka preacher cookies or no bakes)

I grew up calling these ‘Preacher Cookies’ and Ted grew up calling them ‘No Bakes’ (which I think might be the most common name).  Whatever you call them, they are some of the easiest, quickest, and yummiest cookies to make (they are actually Ted’s favorite).  I do usually make them without the chopped nuts though.

tip: years ago, I was making these and only had vanilla soy milk in the fridge.  Oh my… they were scrumptious!

2 c. sugar

1/2 c. butter

1/2 c. milk

3 T. cocoa

1 tsp. vanilla

1/2 c. chopped nuts

1/2 c. peanut butter

3 c. quick oats

In saucepan, bring sugar, butter, milk, & cocoa to boil and boil for 1 minute.  Remove from heat.  Quickly stir in vanilla, nuts, peanut butter, & oats.  Drop on waxed paper and let cool.
