Papa's cornbread

So, I thought Papa’s cornbread would be the perfect addition to our dinner of black eyed peas tonight.  It’s so simple and easy to make and such a lovely taste.  Nothing beats Papa’s cornbread.

1 1/4 c. cornmeal

1 1/4 c. flour

3 tsp. baking powder

dash of baking soda

1 egg

buttermilk (enough to make batter)

dash of salt

Heat oven to 420 degrees.  Mix all ingredients together.  Heat cast iron skillet with bacon grease (I suppose you could use olive oil or vegetable oil but it definitely would not taste as good!)  Add batter to hot skillet.  Bake for 18 to 20 minute.
