Cabbage & Tomatoes

I cooked this tonight as a side dish to beef stroganoff.  Yum!

2 T. bacon drippings

2 T. chopped onion

1 medium head cabbage

1 1/4 c. water

1 tsp. salt

1/2 tsp. sugar

2 T. all-purpose flour

2 c. peeled, chopped tomatoes

2 T. butter or margarine, melted

1/4 c. dry breadcrumbs

3 T. grated parmesan cheese

Heat bacon drippings in dutch oven.  Add onion and sauté until tender.  Cut cabbage into 8 wedges, removing core.  Add cabbage, water, salt, & sugar to onion.  Boil, uncovered, for 8 minutes, turning cabbage once.  Stir flour into tomatoes.  Add to cabbage mixture, mixing well.  Cook over medium heat, stirring constantly, until thickened.  Spoon into serving dish.  Combine butter, breadcrumbs, & parmesan cheese.  Sprinkle over top of cabbage and tomatoes.
