Wilted Lettuce Salad

A big thank you to my mom who mentioned Mema’s Wilted Lettuce Salad in our phone conversation earlier today!  I was able to find the recipe in my stash and made myself a salad for dinner.  Soooooo good!  Of course, anything with bacon is good in my eyes.  I used a bag of salad I already had in the fridge so the salad above has red cabbage in it as well.

5 slices bacon

2 hard-cooked eggs, chopped

2 heads leaf lettuce, torn into bite-size pieces

2 chopped green onions

1 T. sugar

1/4 tsp. salt

1/4 tsp. pepper

1/4 c. cider vinegar

2 T. cold water

Fry bacon until crisp and drain on paper towels.  Reserve drippings.  Combine lettuce, green onion, & chopped egg in salad bowl.  Combine bacon drippings, sugar, salt, pepper, vinegar, & water in a small pot.  Heat to boiling.  Pour over lettuce and toss lightly.  Garnish with crumbled bacon.  Serve immediately.

Note on the recipe card: On a scorching summer day, serve with fresh cornbread for a refreshing light supper.
